If you’ve recently started on the auto-immune protocol diet and are also vegetarian, it can be extremely difficult to find recipes that both fit into your life and taste amazing, too. You might even feel like you’re missing out on some of your favorite foods. Fortunately, there are vegetarian AIP-friendly recipes out there that will fit into your diet!

What is AIP?

AIP stands for Autoimmune Protocol. Autoimmune Protocol is a diet designed to decrease inflammation for those who suffer from inflammatory autoimmune disorders such as lupus, rheumatoid arthritis, celiac disease, Hashimoto’s, multiple sclerosis and other debilitating autoimmune conditions.

What Can You Eat on a Vegetarian AIP Diet?

  • Fresh vegetables, excluding nightshade vegetables.
  • Fresh and dried fruit, excluding goji berries.
  • Fresh and/or dried herbs and spices, excluding seed-based spices.
  • Healthy fats such as avocado oil, olive oil and coconut oil.
  • Natural sweeteners such as honey, coconut sugar and maple syrup (in moderation).
  • Fermented foods such as sauerkraut, kimchi, kombucha and coconut kefir.
  • Vinegars and pickled veggies.
  • Certain gluten-free flours such as cassava flour, tapioca starch, coconut flour and arrowroot starch.
  • Herbal teas.

What Foods Should I Avoid if on a Vegetarian AIP Diet?

  • Gluten and grains, such as wheat, rice, quinoa, corn, oats, etc.
  • All dairy including milk, cheese, butter, yogurt and cream.
  • Legumes, including beans, lentils and peanuts.
  • Nightshade vegetables such as tomatoes, eggplant, peppers and potatoes.
  • Nuts and seeds such as sunflower seeds, hazelnuts, cashews, pumpkin seeds, etc.
  • Alcohol.
  • Coffee.
  • Eggs.
  • Synthetic additives like food dyes, preservatives, gums and highly processed sugars.
  • Seed-based spices like fennel seeds, allspice berries, cumin seeds, anise seeds, caraway seeds and more.
