It's doughnuts time. I love making doughnuts, It is my favourite and I can never stop making new donuts recipes whenever I get time. This version is a yeast free version and also an instant version.

It is made with baking powder and it has a cake like texture in the doughnuts so these are called as cake doughnuts. I loved it so much.

About Doughnuts without Yeast

Doughnuts without yeast also known as yeast free doughnuts. It is made with basic dough of plain flour, sugar, baking powder, milk, butter and egg. Carefully mixed dough is cut out into donuts using either donut cutter or my make-shift doughnut cutter using serving glass and bottle lid. These yeast free doughnuts taste so delicious.

This donuts is also called as cake doughnuts, it has more cake like texture and is popular with the kids. You can play around the doughnuts with different icing. I used plain vanilla icing, but you can opt for cinnamon sugar coating or chocolate glaze. You can even flavour the vanilla icing with strawberry extract and pink food colour to make strawberry glaze.

The dough is made under 10 mins and these doughnuts takes 30 minutes to make from start to finish. I would say that this is the best donuts I ever made. It was so fluffy and like eating a cloud that soft. You will never imagine that it has no yeast.

All Purpose Flour -plain flour is used to make this donuts which makes it super soft and tender. You can use wheat flour but it may affect the texture a bit.

Butter - butter is added to make the doughnuts tender and moist. use unsalted soft butter for making the best doughnuts ever.

Milk - milk is added into the dough to make it more soft and moist. You can use ¼ cup of milk powder and use water to knead the dough.

Baking powder - since this doughnut has no yeast, you need baking powder for rising the dough.

Egg - egg helps make the doughnut soft and tender. You can skip this if you want.

Sugar - a small amount of sugar is added in the dough to sweeten it. You can use honey instead of sugar.

Vanilla extract - a small amount of vanilla helps flavour the dough.

For Glaze - I made a basic glazed doughnuts. I made the glaze using confectioner sugar (icing sugar), milk and vanilla extract.

Tips for Best Tasting Doughnuts

This is the easy doughnuts you can ever make. Some people struggle to get yeast doughnuts right, you can start making this doughnuts instead. Also it is a great kids friendly recipe. Here are few of my top tips and tricks for getting perfect result each time.

Soft Dough - since this doughnut, doesn't have yeast and only depends on baking powder, you have to get the doughnut dough right. Make sure the dough is soft and not too stiff. If the dough is too stiff and hard, then the doughnuts tends to get dry. If you find the dough too stiff, add more milk and knead well.

Shaping - if you are making donuts more often, then I highly recommend you to buy a donut cutter which makes this job easier. Else you can use a serving cup and a small bottle lid.

Frying - you shouldn't keep flipping the doughnuts often when frying. Instead let the doughnuts fry on one side for few minutes till it gets some colour and then flip it gently using a fork and fry.

Glazing & Decorating - I used a simple vanilla glaze for this recipe, but you can be creative with your glaze. You can decorate donuts with sprinkles as well.

How to Make Yeast Free Glazed Doughnuts (4 Easy Steps)

Making Dough - Take flour, salt, baking powder in a bowl and mix well. Set aside. Take egg, sugar, milk, melted butter, vanilla in a bowl and whisk using a fork. Now add the flour in and mix well using the fork. Knead to a soft dough.

Cutting Doughnuts - Take the dough onto a rolling board and roll it out. Cut doughnut shape using doughnut cutter or a cup and a small bottle cap. Take the scraps and roll it again and repeat the same, do this till the entire batch of dough is used up.

Frying Doughnuts - Heat oil for deep frying. Drop doughnuts in and fry till golden on both sides. Remove it to a plate and set aside.

Glazing - Make glaze by mixing all the ingredients to a little semi thick consistency. Dip doughnuts in and coat on both sides. Arrange it in a cooling rack so the glaze sets and harden. Serve.

Troubleshooting

Why my doughnut disintegrate/fall apart in the oil?

If your dough is too dry and has crumbly texture, it might disintegrate in oil when frying. So make sure you mix the dough gently till it is smooth and allow them to rest for 5 minutes before shaping.

Fried donut is raw/gooey inside?

Make sure the oil is at the right temperature before adding in the doughnuts. Fry one side till it gets golden and then flip to cook.

sometimes this happens if your oil temperature is too high. So adjust it accordingly.

why my donuts is dense after fried?

Don't over knead the dough. Over kneading will make your doughnuts too dense. Also when frying doughnuts, don't fry it too much which might turn the doughnuts hard.

Ingredients

1)Take all your ingredients for doughnuts. This is a no yeast doughnuts, so I am using baking powder to help with the rise.

Mixing Dry ingredients

Frying Doughnuts

23)Drop the doughnuts in medium hot oil and fry for 1 to 2 minutes on each side till it turns golden brown. Once you drop the doughnuts in, let them fry for 1 minute on each side. Don't flip before it gets some colour.

  • If you have milk powder, you can add ¼ cup of milk powder and ½ cup of water instead of milk.
  • I used vanilla glaze for the doughnuts, you can make chocolate glaze as well.
  • Don't over knead the dough. Over kneading will make your doughnuts too dense.

Storage & Serving

This doughnuts is best served immediately (fresh). It doesn't keep that well, so better make it fresh and enjoy immediately.

If you have any leftovers, keep them in an air tight container at room temperature for a day. You can reheat in microwave for 20 seconds and enjoy.

FAQ

Can I make this dough in advance?

Yes! Just store the dough in an airtight container in the fridge. It will last for 2 to 3 days in fridge.

Can I make this dough eggless?

Yes! you can use a tbsp of natural plain yogurt instead of egg or skip egg entirely in this recipe and use more milk.

Should I use only Icing sugar?

You can use powdered sugar for glaze, but icing sugar will provide smooth texture in glaze.

can we use whole wheat instead of maida? And is shallow fry possible ?

Yes you can use whole wheat flour instead of maida and shallow frying is possible if you have at least 2 inch of oil in the pan. Else the doughnuts may not fry properly.

can we bake these doughnuts ?

I haven't tried it myself. So I am not sure about baking this doughnuts.
