A good old-fashioned meatloaf was a staple in our southern household growing up. Not only was it an easy dish for my mom to put together for the family, but it was SO full of flavor and absolutely filling (even for the guys in the house)!

So, I knew I would eventually need to put together a grain free (healthier) version for myself to enjoy.

I’ll be honest – my first few rounds tasted great, but the texture wasn’t holding together correctly (I still devoured it though lol!). I finally found the ‘secret’ ingredient to balance out the texture without compromising theflavor…. Ground Flaxseeds!

Not only dothe flaxseeds help to balance out the texture, but they also providesome added fiber & nutrition to help boost metabolism and weight loss…. which is something you don’t get with regular meatloaf. WIN/WIN!

Watch the video below to see how I make it…. and, let me know if you like it!

This grain free meatloaf is perfect for an easy, healthy weeknight dinner that you can prep in advance.

Ingredients

Directions

  • For the Meatloaf:
  • Preheat oven to 375 degrees F. Grease a loaf pan with any type of oil of non-stick spray and set aside.
  • In a skillet over medium heat, add 1/2 Tbsp of oil and the chopped onions. Saute onions until they’re slightly soft and transparent. Add the minced garlic and continue to saute for another 1-2 minutes. Remove skillet from stovetop.
  • Add all meatloaf ingredients to a mixing bowl and mix with hands until fully combined. Transfer meatloaf mixture to the loaf pan and press mixture down into the pan so that it’s fully packed in. Set aside.
  • For the Sauce:
  • In a small saucepan over low-medium heat, add the honey. Let honey get slightly warm then add the tomato paste and salt. Whisk until fully combined and then remove from heat.
  • For Assembly and Baking:
  • Spread sauce evenly over the meatloaf mixture. Bake meatloaf for 35-45 minutes or until you can insert a toothpick in the center and it comes out clean.
  • Remove meatloaf from oven and let rest for 5-10 minutes before slicing and serving.

Notes & Nutrition

  • This meatloaf will stay fresh in the fridge for up to 3-4 days.

A few years ago we went wheat-free, and this was a great recipe. My family really enjoyed it. We got off the wheat-free diet, but have decided we felt be when on it, so I am making this meatloaf tonight as we begin our wheat-free lifestyle again. It smells delicious! Thank you for sharing it with us!!

Sorry for the delayed reply! I’ve not tried it with any other substitutes, but ground chia may also work.

FAQs

What is a healthy substitute for breadcrumbs in meatloaf? ›

4. Ground Nuts: For an added touch of texture when substituting bread crumbs, consider ground nuts like almonds, walnuts, or pecans as an alternative. After finely chopping, swap the bread crumbs with an equal amount of ground nuts in your recipe. The result is a meatloaf boasting even richer flavors.

What can I use as a binder in meatloaf instead of breadcrumbs? ›

If you don't have any bread, you can substitute it for breadcrumbs, crackers, cereal grains, oatmeal, instant rice, instant barley, or even potato flakes!

What ingredient keeps meatloaf from falling apart? ›

When this happens, it's because you didn't use enough. Next time, try adding in an extra egg and/or some more breadcrumbs. Alternatively, rice, barley, corn flakes, crackers, and dried soup mix can also stand in as binding ingredients as well. Including larger quantities of these items should help solve the problem.

What can I use instead of breadcrumb low Fodmap? ›

Instead of breadcrumbs, try corn flake crumbs or brown rice crumbs. Instead of wheat crackers, try rice crackers. Instead of pasta sauce (usually with garlic and onions), try FODY Marina. Instead of sugar snap peas, try green beans.

What is a vegetarian substitute for breadcrumbs? ›

Riced vegetables like cauliflower and sweet potato are ideal breadcrumbs substitutes to add as a binder. They work similarly to cooked rice, as explained above. To prepare cauliflower or sweet potato rice, you should first shred the vegetable using a shredder or a grater.

Are panko breadcrumbs gluten-free? ›

Yes. Providing Panko Breadcrumbs are made with gluten free bread and are processed and cooked in a gluten-clean environment, they are safe for people with Coeliac Disease (Celiac) and other gluten or wheat avoidant conditions.

Is oatmeal better than bread crumbs in meatloaf? ›

Oats are the perfect substitutes for breadcrumbs in meatballs or meatloaf. While they aren't ideal for a crispy coating, they add the right amount of texture to bind meat, eggs and flavorings together into a delicious Italian-inspired feast.

What is the secret to a great meat loaf? ›

Use high-fat meat.

For a meatloaf made with a leaner beef or turkey, consider mixing in some ground pork and/or veal in order to achieve a moist, tender meatloaf. Chopping up bacon and adding it to the mix is always a great way to add fat. Oh, and covering it in bacon never hurts, either.

What happens if you put too many eggs in meatloaf? ›

Fewer eggs will create a denser and firmer meatloaf that will be more compact and easier to slice, but more eggs can create a more tender and light texture that allows the meatloaf to melt in your mouth.

What is a healthy alternative to breadcrumbs in meatloaf? ›

Oats are a great breadcrumb substitute when used as a binder in meatballs or meatloaf. Try them in one of Ree Drummond's favorite recipes: BBQ comfort meatballs. Just keep in mind that they don't add much flavor, so if you're using them in a recipe that calls for breadcrumbs, you may need to add extra seasoning.

Is oatmeal gluten free? ›

Yes, pure, uncontaminated oats are gluten-free. The U. S. Food and Drug Administration considers oats a gluten-free grain under its gluten-free labeling regulations and only requires that packaged products with oats as an ingredient contain less than 20 parts per million of gluten overall.

What can I use to bind instead of breadcrumbs? ›

Rolled oats are the perfect gluten-free binding ingredient, replacing breadcrumbs in meatballs or meatloaf and many more recipes when you need to bind meat and eggs.

Why does meatloaf need bread crumbs? ›

Breadcrumbs for meatloaf are used to absorb the juices and keep them in the meat while it cooks so that it stays moist; without the breadcrumbs, the meat would dry out in the oven. Breadcrumbs also add to the meatloaf's tender texture so it's more than a giant seasoned hamburger when you pull it out of the oven.
