What are Ube Pancakes?

Ube pancakes are a delicious and vibrant twist on traditional pancakes.

These pancakes are derived from the purple yam known as ube. It has a beautiful deep purple color that adds a visually appealing element to your breakfast, brunch, or dessert.

These pancakes are prepared by incorporating ube extract and ube halaya, which is also known as mashed ube or ube jam, into pancake batter.

They are cooked to fluffy perfection and best topped with complementary flavors like coconut and condensed milk.

What Does Ube Taste Like?

Ube is a popular ingredient in Filipino desserts. It tastes like a combination of vanilla, coconut, and earthy flavors. It has a subtle sweetness and nuttiness, resulting in distinct and irresistible treats.

Step 1: Prepare the Pancake Batter

How to Make Ube Pancakes with Pancake Mix

To make these ube pancakes, you can easily incorporate the flavors of ube while enjoying the convenience of a box pancake mix.

I love taking shortcuts in the kitchen and am a firm believer that you don’t need to make something from scratch for it to be delicious.

You’ll need the following ingredients to make these easy ube pancakes. You can find these at your local Filipino or other Asian grocery store.

  • pancake mix (buttermilk or other neutral flavor)
    • plus additional ingredients according to package instructions
  • ube extract
  • ube halaya (aka ube jam or mashed ube)

Start by preparing the batter according to the instructions on the package of your favorite pancake mix.

Then, incorporate the irresistible flavor of ube by adding ube extract and ube halaya (mashed ube or ube jam) to the wet ingredients. Mix well to ensure the rich purple color and mashed ube are evenly distributed.

Mix the dry ingredients and wet ingredients separately before combining. This helps to avoid over-mixing the batter.

Stir just until the wet and dry ingredients are combined, some clumps in the batter are ok. For light and fluffy pancakes, be careful not to over mix.

Step 2: Cook the Ube Pancakes

To cook ube pancakes, heat a non-stick pan or griddle over medium heat. Add butter to your preference or as needed to help the pancakes from sticking.

Pour the ube pancake batter onto the heated surface. I recommend using about ⅓ to ¼ cup of batter for each pancake.

Cook until bubbles start to form on the surface, then gently flip the pancakes and continue cooking until golden.

Another tip for fluffy pancakes, is to only flip once. Don’t flip it multiple times, press down on it, or move it around. Just flip once and leave it alone.

Step 3: Prepare the Ube Coconut Sauce

After you cook the pancakes, it’s time to prepare the luscious and creamy ube coconut sauce. This part is super easy and only takes a few minutes to whip together.

You’ll need the following ingredients:

  • coconut cream
  • condensed milk
  • ube extract

I like to use regular condensed milk which helps to get the right balance of sweetness, color, and consistency. I find that ube flavored condensed milk is too dark and makes the sauce look almost black.

In a small saucepan, combine the coconut cream, condensed milk, and ube extract. Place the pan over medium heat and stir gently to throughly mix the sauce and heat through.

Taste test and adjust to your liking! I love it creamy and not too sweet.

Lastly, remove the ube coconut sauce from the heat and let it cool. The sauce will thicken slightly as it cools.

Finally, serve the warm and fluffy ube pancakes with a generous topping of the ube coconut cream sauce. You can also top them with your favorite pancake toppings like fresh berries or coconut flakes for additional texture, flavor, and visual appeal.
