Is there anything more perfect than a toad in the hole on a Sunday? As I have talked about before, a Yorkshire pudding is one of my favourite parts of a Sunday roast dinner/ A toad in the hole is basically just one massive Yorkshire pudding filled with sausages.

It is certainly not one of the most healthy dishes, but thanks to a few practice runs and trial and error, I have perfected what I believe to be the best, slimming friendly version of a toad in the hole.

The calorie count will vary depending on the sausages you use, so make sure you double check. I served mine with plenty of vegetables, mashed potatoes andhealthy, low calorie gravy.

This batter mix recipe really does work best when left overnight, as it helps it to rise properly. I used the Slimming World sausages, but and low fat alternative can be used. Just remember to adjust the calorie count or syn value accordingly.

I made my batter the night before.

You will need:

The batter works best if left for a few hours in the fridge, or better still over night.
4 Low fat sausages (adjust calorie count accordingly)
30 g Plain Flour
2 Eggs
75 ml Skimmed Milk
Frylight
1 pinch salt & pepper

Method:

In a bowl, whisk together the eggs, flour, milk and salt until smooth. Cover and place in the fridge at least over night.

When ready to cook the meal, preheat the oven to 190 degrees.

Put the sausages in the dish you are going to use to cook the toad n the hole, place in the oven for 10 mins, until they are slightly browned.

Remove and spray a generous amount of frylight on the dish. Pour over the Yorkshire pudding mix and cook for 20 minutes, keep an eye on it but do not open the oven door for the first 10 minutes, as you could lose all the puff!

When the Yorkshire pudding is golden and risen, remove and serve.
