"Since I don't like salad dressing, I created this simple salad. Not only is it yummy but it is better for you since the only dressing it does have is the one it creates. After we finish eating the veggies, I like to strain the seeds out of the juice and use it as a salad dressing substitute on a green salad. Since you make it in a bowl with a sealable lid, it is great for picnics or potlucks. The prep time also includes refrigeration time."

- 1 large cucumber, cubed
- 1 -2 medium tomatoes, cubed
- 1⁄2 small onion, chopped
- fresh basil, chopped
- garlic salt
- pepper

directions
- Add cucumber, tomato and onion to a bowl with a cover.
- (preferably tupperware or something similar.) Add garlic salt, pepper and basil to taste.
- Seal bowl and shake.
- Refrigerate for at least 1 hour.

This recipe is excellent! Perfect for a hot summer day. I didn't have any fresh basil on hand so I used dried and it turned out really well.

Kari - I love this simple salad. I use sweet onions (vidalia, Walla Walla, Maui or Spanish) I can usually find one of them. I use lemon basil (it's a small leafed basil and very good) Love this salad with a steak and baked potatoe. I confess I do like a bit of dressing but usually use a no fal Dijon/ Tarragon dressing - Thanks for posting this good salad

As a Weight Watchers member, I am constantly looking for good, low calorie recipes. This salad was excellent. Since I didn't have fresh basis, I used fresh cilantro instead and it was quite tasty.

I also will be making this all summer. It is a perfectly refreshing side dish with simple flavours. I used a 1/4 clove of garlic with regular salt instead of the garlic salt, and served it with small portions of Macaroni and Cheese (#19843). Delicious, thanks! Ooh, I'll bet the leftover juice would be a nice addition to a Bloody Caesar or Mary.

Have made this several times. Originally followed the recipe and enjoyed this very much. Also tried substituting dill for the basil which was very good. The last time I made this I added a tablespoon of balsamic vinegar-that was the best yet! Will be making this often.

I was married to a Italian here is what you need to do cut up tomato s 3or 4 cucumber diced then take a wooden salid bowl crush some fresh garlic rub the bowl with it ...stay with me here add tomatoes cukes onion salt and pepper push them around the bowl till mixed then cover with towel let sit on counter for a HR....you will see a lot of juice in bowl add fresh basil balsamic vinegar the expensive age type if you choose if not the cheap add a touch of sugar if you like then let's set for another hour on the counter covered with a towel ready to eat some garlic bread dip in the juice it'll set you free

I make this quite often, but I add a bit of rice wine vinegar, and just a little bit of feta cheese to give it a bit more flavor. It is still low fat and healthy with these additions.

This was delicious! I used about 2 teaspoons of red wine vinegar, and garlic powder and salt instead of garlic salt, which I don't have. Otherwise followed the recipe exactly. The tomatoes and basil were fresh from the garden, and the cucumbers came from the farmers market. Even with the vinegar, the natural flavors of the veggies came through beautifully! I think next time I may omit the vinegar and use mint instead of basil. What a fun, versatile recipe! Thanks for posting!
