True story: I make this salad at least once a week. It’s the one salad I make most often for weekend guests. Here’s why:

  • Everything about this salad is easy; it’ll be good to go, start to finish, in under 15 minutes!
  • It calls for a combination of anylettuceand freshveggiesyou have on hand.
  • No fancy prep steps, just simply chop theveggieingredients.
  • The GREEN GODDESS DRESSING is really, really tasty.

One last thing goes to the “healthy” moniker I included in the title of thissalad recipe. Sure the dressing contains mayo, sour cream, and (wait for it!) bluecheese, but we’re adding it sparingly. The go-forward for healthy is lots of freshvegetablesthat are packed with vitamins,minerals, andfibre. If you have access to organic and locally grownveggies,even better. Trust us, you’ll see how healthy can taste delicious!

INGREDIENTS

Make it with everything fromtomatoes,cucumbers,bell peppersand celery. You can also try thishealthy salad recipewith greenbeans, cauliflower, broccoli, carrot, avocado, sweet peas,red onionand zucchini. Change it up by usingleafy greens,iceberg lettuceorspinachin place of theromaine,ortossin your favourite nuts likealmonds,pecans, walnuts or sunflower seeds. Sure I could have used our popular ASIAN or JAPANESEsalad dressing. There was a second where I considered drizzling on our CREAMY RANCH or CLASSIC CAESAR DRESSING. Instead, we crafted something entirely new, and are we ever pleased with the results. SALADBOWL

Although this story was written with the simple directions of placing the chopped veggiesinto a large saladbowl, adding the dressing,tossingand serving, there are other options too. The salad presented as is will serve six guests, but you can also portion it out and dress the salad accordingly to accommodate smaller numbers. Better still, place portions in small storage containers along with a single serving of the dressing to take to work as a healthy lunch option.

SERVE

Presenting the salad as is on smaller appetizer plates is the way to go with this one; no need to get fussy with the presentation. That said, I do like todrizzlea tiny bit more of the dressing onto the salad as a little flavour boost.

Ingredients

  • For the salad:
  • 1 head ofromaine
  • 6-8 smalltomatoes, quartered
  • 2 cucumbers, roughly chopped
  • 2 celery ribs, sliced
  • 5 radishes, thinly sliced
  • 1 redpepper, seeded and cut into chunks
  • 2 greenonions, thinly sliced
  • ½ cup green goddess dressing, more to taste
  • For the dressing:
  • ½ cupmayonnaise
  • ¼ cupsour cream
  • ¼ cup bluecheese
  • ½ cup whole milk
  • 1 clove garlic
  • 1 teaspoonkoshersalt
  • ¼ cupfreshparsley
  • ¼ cup fresh dill
  • ¼ cup fresh chives
  • juice from ½ a lemon
  • ½ teaspoon granulated sugar (optional)

Directions

  1. Prepare the dressing: Place all of the dressingingredients, except for the sugar (optional) and lemon juice, into a conventional blender, food processor, or a deepbowlfor an immersion blender. Process until all of the herbs and garlic are finely chopped and the dressing has a creamy consistency. Add sugar to taste, if desired. Add lemon juice, then pulse for a few seconds more until blended.
  2. Prepare thelettuce: Remove and discard any blemished leaves from thelettuce. Divide the headdown the middle lengthwise, then cutinto 1-inch pieces. Rinse and spin thelettucebefore transferring to a large saladbowl.
  3. Prepare salad: Addveggiestolettucein large saladbowl.Drizzlewith dressing andtossgently. Add more dressing if required.
  4. Transfer portions to plates, adding more dressing, if desired. Serve immediately.
